  1. Bring a large pot of salted water to the boil and cook 400g of spaghetti according to packet instructions.
  2. While pasta cooks, heat a little oil in a large pan over medium heat. Sauté 1/2 a diced onion and 2 minced garlic cloves until soft.
  3. Add 500g beef mince and cook until browned, breaking it up with a spoon.
  4. Pour in 1.5 cans (600g) of diced tomatoes. Season with salt and pepper.
  5. Simmer for 10–15 minutes until thickened, then toss with the cooked spaghetti.

Tuesday — Beef & Veggie Stir-fry with Rice

  1. Cook 3 cups of rice (dry measure 1.5 cups) according to packet instructions.
  2. In a large pan or wok, brown 500g of beef mince with 1/2 a diced onion and 2 minced garlic cloves.
  3. Add 1/3 bag of frozen mixed vegetables and stir-fry for 5–7 minutes until the vegetables are tender.
